EVALUATION OF FOOD VALUE AND MINERAL COMPOSITION OF Allium sativum FROM WURNO, SOKOTO STATE

Abstract

The proximate and mineral element composition of Allium sativum (garlic) were analyzed in samples from Wurno, Sokoto State of Nigeria. The analysis was done using the standard method of analysis. The result revealed that the sample contained 75.71 ± 0.29 % residual moisture, 9.03 ± 0.50 % ash, 3.43 ± 0.29 % crude lipid, 19.60 ± 6.77 % crude protein, 8.19 ± 0.29 % crude fiber and 24.30 ±0.29 % available carbohydrate. This indicates that Allium sativum contained appreciable carbohydrate, crude protein and crude fibre. The trend of K > Na > P > Ca > Mg was observed in the elemental mineral analysis. This signifies that the sample could serve as a good sources of mineral nutrients.
