NUTRITIONAL EVALUATION OF VIGNA SUBTERRANEA SEED

Abstract

The proximate and mineral composition of Vigna subterranea seeds were analysed using standard analytical procedures. The result showed that the seeds contained 10.17±0.76% moisture, 3.80±0.29% ash, 4.17±0.29% fibre, 5.67±0.76% lipid, and 21.46±0.02% protein and 54.73±0.50 % carbohydrate. The result also showed that the seeds had some macro and trace elements such as sodium 82.33±6.29mg/100g, potassium 98.80±1.57mg/100g, magnesium 0.62±0.03mg/100g, phosphorus 5.28±0.10mg/100g, calcium 0.13±0.03 mg/100g and zinc 0.18±0.01mg/100g, iron 0.44±0.05mg/100g, lead 0.00±0.00mg/100g respectively. This is an indication that the seed of Vigna subterranea could be a potential source of nutrient to both man and livestock because of its considerable quantities of some essential food component
