ISOLATION AND CHARACTERIZATION OF FUNGI ASSOCIATED WITH PROCESSED COW SKIN (GANDA) SOLD IN BIRNIN KEBBI NEW CENTRAL MARKET, KEBBI STATE

Abstract
This research was carried outto isolate and identify fungi associated with processed cow skin (Ganda or
Ponmo) sold in Birnin Kebbi new centralmarket.A total of Thirty (30) piece samples of Ponmo were
purchased from different sales points labelled as; A, B and C. Screening for fungal contamination was
conducted using standard procedure during the month of August, 2019. Five fungi were isolated and
identified from “Ganda” namely; Aspergillus niger, Mucor species, Aspergillus flavus, Penicillum species and Rhizopus stolonifer. The predominant fungi isolated was Aspergillus niger with 48% and the least was Mucor species with 9%. The results of mean spore forming unit obtained ranged from 1.2x106 to 8.0x 106Sfu /ml in all the samples analyzed.It could be concluded, that Ganda sold in the study area, were found to be contaminated with various fungi which might be harmful to human when consumed in large amount over a long period of time. Proper care should be taken in handling, display in the market places and processing of Ponmo/Ganda as some of these fungi are known to have negative impacts on humans as they produce mycotoxins. This findings recommended for a proper hygiene practice, sanitary environment, modern technology in preserving and distribution of Ganda in Birnin Kebbi new central market, Kebbi State.
